With all the rain the last few weeks, we've basically been housebound. Hunkered down on the couch with blankets and cooking up lots of good food. I thought I'd share some of the yummy meals we've been eating recently.
Roasted Red Kuri Pumpkin & Coconut Soup

this was a fantastic twist on regular, old pumpkin soup. topped with fried shallots - yum!!

Autumn Vegetable Roast

potatoes, butternut squash, shallots, carrots, asparagus
*toss with olive oil, s&p, garlic, and chili flakes. bake at 400º for 30-40 mins.
Hub's Sweet & Spicy Chili

perfect for a cold and rainy day
*we would have loved to use this recipe if we could find some chipotles around here!
Steak Sandwiches & Oven Baked Fries

i've been pretty obsessed with making these fries lately! they're crispy on the outside and chewy on the inside

Semi-Homemade Apple Cider

this really hit the spot! next time, i'm adding some whiskey ;)
*place 1L of apple juice in a pot with 5 cinnamon sticks, 4 whole cloves, and a piece or two of orange peel. bring to a boil and then simmer for at least 15 minutes.
Baked Salmon with Corn & Tomato Salad

i love a good side of yummy raw vegetables
*recipe from my head, just mixed a lot of chopped vegetables with
this homemade salad dressing
Steak Salad with Roasted Potatoes and Tomatoes

adding the roasted veggies was a nice change to our usual salad mix.
Warm Butternut Squash and Chickpea Salad

easy and really delish. i just love a warm salad!
*based on this Smitten Kitchen recipe. i had to change up the dressing a bit because i couldn't find tahini paste here. then i served the salad over spinach lightly sauteed in olive oil, salt and garlic.
