Crockpot Creation Part 2: Meaty, Chipotle Chili

It was uncharacteristically chilly and rainy this Thanksgiving weekend, which meant that we had to come up with an alternative for The Hub's Birthday BBQ.  We decided to move the party inside and put together another Crockpot Creation! As usual, this creation was The Hub's brainchild.  He wanted to do a chili that included a LOT of meat and some slow heat, which can best be derived from chipotle chilis.  That's why I'm calling this Crockpot Creation Part 2:  Meaty, Chipotle Chili.

The Hub was a bit ambitious about the number of ingredients he wanted to include in the Crockpot and it ended up overflowing onto the counter by the time we woke up on Saturday morning.  It's all about trial and error with the Crockpot!  So I'm adjusting the ingredients slightly from what we actually did.  The chili turned out to be fantastic and a big hit at the birthday party!  It was hearty, meaty and had just the right amount of heat & spice.  I served it up with some sour cream and shredded cheddar.  The sour cream complemented the heat and the cheese, well, cheese just makes everything better.

You’ll Need:
  • 2.5 lb. pork shoulder
  • 1 lb. ground pork
  • 1 can of garbanzo beans, drained and rinsed
  • 1 can of black beans, drained and rinsed
  • 1 medium 12oz. can of tomato paste
  • 1 medium 16oz. jar of Chipotle salsa
  • 1 small 7oz. can of Chipotle peppers (such as Herdez)
  • ½ lb. fingerling potatoes
  • 5 oz. light beer
Directions: Rinse pork shoulder and pat dry.  Heat oil in a large skillet.  Sprinkle pork with salt and pepper and sear on all sides.  Transfer pork to Crockpot. Put all the rest of the ingredients in the Crockpot and cook on low overnight, or about 8 hours.  Shred pork with a fork and stir to mix.  Serve with sour cream, cheddar cheese.  Cornbread would be an excellent way to round out this meal!
