Triple Threat Brownies

If you're like me and your Book Club is really more of a cooking competition, then you need to make these Triple Threat Brownies for your next meeting.  This is my second time making these brownies and, just like the first time, they were a crowd pleaser!  I came across this recipe last year through one of my favorite baking blogs, Buns in My Oven.  They are not hard to make, but they do take some time.  The original recipe calls for peanuts, but I feel that adding nuts to brownies is very polarizing.  Plus, I don't care for it.  So instead, I added caramel!  It was the perfect addition, if I do say so myself. You'll need: For the brownie base:
  • 1 box brownie mix OR favorite recipe brownies (9×13 pan size)
For the cream cheese frosting:
  • 16 ounces cream cheese, softened
  • 1/2 cup butter, softened
  • 2 cups powdered sugar
  • 1 teaspoon vanilla
  • Caramel syrup/ice cream topping
For the chocolate peanut butter rice krispies topping:
  • 1 cup peanut butter
  • 1 1/2 cups milk chocolate chips
  • 3 cups rice krispies cereal
1.  Mix brownies according to package directions or your favorite recipe. Bake and allow to cool completely.  2.  Beat together cream cheese, butter, powdered sugar, and vanilla until fully mixed. Spread on top of cooled brownies.  3.  Next, top with caramel topping.  I think I went a little too close to the edges because it spilled out the sides when I added the top layer.  I would suggest keeping a 1" border free of caramel....or not.  I mean, can you ever really have enough caramel? 4.  In a large saucepan, combine chocolate chips and peanut butter over low heat. Continue stirring until the chocolate and peanut butter are melted. Stir in cereal, making sure to coat all the cereal in the peanut butter chocolate mixture.  Spread the cereal mixture on top of the brownies and frosting and chill in the refrigerator for 30 minutes.  Keep covered and store in the refrigerator. Enjoy!
