Summer Recipes: Fish “Taco” Lettuce Cups

Since it's been soooo hot here in the South of France, The Hub and I have been trying out some new recipes that require very little cooking.  A few weeks ago, we were craving fish tacos, but wanted something a little lighter and fresher than the traditional fried fish with corn tortilla shell, so Fish "Taco" Lettuce Cups were born.

These little suckers were so easy to make and tasted refreshing and delicious!  Plus they are super healthy, which is an added bonus.  Here's how to do it yourself. You'll Need:
  • Red Pepper
  • Jalapeño
  • Red Onion
  • Firm, white fish filets, like Halibut
  • Lemons or limes
  • Salt and Pepper
  • Lettuce suitable for making cups, like Butter Lettuce or Bibb Lettuce
Directions: Chop up first three ingredients and put into a bowl.  Just use as much as you need for the amount of people you are serving.  To serve two people, I would use 1 pepper, 1 jalapeño and half a red onion.  Set aside. Sprinkle the fish filets with salt and pepper.  Heat a skillet with oil over medium-high heat and cook the fish until cooked through, about 3-4 minutes on each side. Add the fish to the bowl of veggies and use a fork to shred.  Add lots of lemon juice, salt and pepper until it tastes delicious.  Scoop the mixture into the lettuce cups and serve.  If desired, top with sour cream or cilantro.

I served my lettuce cups with a quick salad made of cherry tomatoes, cucumbers, red onion and vinaigrette.  Don't forget the rosé!
