Another Quick Meal

The Hub and I just got back from a 10 day European adventure and it was amazing!  I can't wait to blog all about it and share my favorite travel spots with you.   But for now, we're just working on getting back into the swing of things and recovering from jetlag before we hope on a plane again next week.

We've been a little hectic this week so I wanted something very simple and fast for dinner.  Gourmet Garden is a company that makes fresh, refrigerated herbs and spices that I have used a few times before when I wanted fresh basil or oregano without dealing with cleaning and chopping herbs.  But now they have a new line of products called "Gourmet Garden Fresh Blends." 

These little tubes of deliciousness contain different flavors like Mediterranean, Thai, Moroccan, and Mexican.  They were on deal at Safeway 2 for $5 so I decided to try a few out.  And I was pleasantly surprised!  The blends are spot on without tasting artificial or too salty (which is usually my complaint with this type of product).  Here's what I made: Moroccan Turkey Burgers You'll need:
  • Ground Turkey
  • 1 tube Gourmet Gardens Fresh Blends Moroccan
  • Garlic Powder
  • Black Pepper
  • Olive oil
  • Chicken Broth
  • Pita Bread
  • Thinly sliced cucumber
  • Hummus
  • Chopped tomatoes

Combine first 4 ingredients in a bowl.  Form burger patties.  In a large skillet, heat olive oil and about 3 tbsp of chicken broth (this will help keep the burgers moist, which can be a challenge with ground turkey).  Add patties and cook, covered, about 5 minutes on each side or until burger is cooked through.

Lightly toast pita and top with hummus.  Wrap burger in the pita and add cucumber and tomato.  We didn't have cucumber and tomato for the pic below, but we decided it would be a great addition!

Thai Chicken Salad

I took this recipe from a neckhanger on the Thai Fresh Blends tube.  At first I was worried that the dressing was a little strong, but it actually tasted great!  Here is the recipe and picture directly from the website:

You'll need:

  • 1 tbsp. olive oil
  • 2 chicken breast fillets
  • 2 tbsp. Fresh Blends Thai
  • 2 tsp. brown sugar
  • ¼ cup lime juice
  • 1 tbsp. fish sauce
  • 1 small cucumber, peeled, halved & sliced
  • 3 green onions, chopped
  • 1 cup bean sprouts
  • ½ cup packed/mixed  Asian salad greens
  • 1 red bell pepper, thinly sliced
  • Roasted peanuts to serve
Heat olive oil in a large frying pan. Coat chicken breast fillets with 1 tbsp. Fresh Blends Thai . Cook chicken for 6 - 7 minutes each side or until cooked through. Set aside. Thinly slice. To make dressing, whisk together 1 tbsp. Fresh Blends Thai , brown sugar, lime juice and fish sauce in a small bowl.  Place chicken, dressing, cucumber, green onions, bean sprouts, asian salad greens and bell pepper in a bowl. Toss to combine. Serve topped with roasted peanuts.
